From Circus Tent to Disney Kitchens and U.S. Baking Show
Jean Carlos, a former circus performer from Brazil, now crafts desserts at a Disney hotel and competes on Food Network’s Holiday Baking Championship

A story with the flavor of resilience and a touch of magic is unfolding in Orlando. Jean Carlos, a Brazilian pastry chef who once performed in a circus in rural Brazil, is now dazzling guests at one of Disney’s most prestigious hotels—and taking his talent to national television.
Carlos has been selected as the only Brazilian contestant on the Holiday Baking Championship, one of the most popular baking competitions in the United States. The show premieres November 3 on Food Network and features 12 bakers tasked with creating holiday-inspired desserts for a $25,000 prize.
“It’s a dream come true,” said Jean Carlos. “I never imagined that the same hands that juggled in a circus would one day be crafting desserts on American television.”
Born in Mato Grosso do Sul, Jean grew up under the big top, learning to perform alongside his mother in a traveling circus. But it was in the kitchen—not the ring—where he discovered his true calling. “Baking became my way of bringing joy to people,” he said. “It was also my path to a better life.”
Now based in Orlando, Jean is the pastry chef at the Swan Hotel, part of the Walt Disney World Resort. His creations are known for blending Brazilian flair with classic French techniques, often incorporating tropical flavors and whimsical designs.
His journey to the United States was anything but easy. “There were moments I thought about giving up,” he admitted. “But my passion for pastry kept me going. Every dessert I make carries a piece of my story.”
As he prepares to compete on national television, Jean hopes to inspire others—especially fellow immigrants and aspiring chefs. “If I can go from a circus in Brazil to a Disney kitchen in America, anyone can chase their dreams,” he said.
The Holiday Baking Championship airs weekly on Food Network, with festive challenges that test creativity, technique, and holiday spirit. Jean Carlos is ready to represent Brazil with pride—and a sprinkle of sugar.
